The grounds

Characteristics of the domain: terroir with granite soil, on a saprolite rock with pebbles of “bacon” and quartzites. There is the presence of manganese in the basement. The exhibition is oriented south-south / east and the vineyard is at an altitude of 23o to 28o meters

The way we work

Through my daily work, I practice a reasoned culture by stimulating the life of the soil with plowing or grassing, while controlling the vigor of the vine. The cultivated grape variety is the Gamay, cut in goblet. The vines are about 50 years old, with a density of 10,000 cubic feet per hectare and a yield of 25 to 40 hectoliters per hectare.

Winemaking

The harvest is totally manual. The pickers make a first selection on the vine, then the grapes are removed on the table until the grapes are of high quality.

In cuvage, the harvest is destemmed from 50% to 100%. It then sinks between 10 days and 3 weeks. Fermentations are started with natural or starter yeasts.

The wines are aged from 7 to 22 months in oak barrels, oak barrels and cement vats. The pressing is carried out on a pneumatic press, the temperatures are controlled.
